How to make roast duck with red oil and lettuce

1. The duck is a quick-frozen duck bought from the market. Since I want to fry it, I bought a tender duck, which tastes better when roasted.

2. We marinate the duck with fresh ginger juice for a few minutes. Some frozen ducks bought from the market will have a strange smell from the cold storage, which affects the taste. Marinating with ginger juice can restore the freshness and remove the strange smell.

3. Wash the marinated duck, drain the water and cut into even-sized pieces for later use

4. Cut the onion, ginger and garlic into sections and set aside

5. Cut the pickled pepper into sections and set aside

6. Remove the skin of the lettuce, wash it and cut it into even-sized pieces

7. Heat the oil in a wok over medium heat. When it is 60% hot (steam rises above the oil), add the duck and stir-fry for 3 minutes to squeeze out the moisture.

8. When the frying time is golden brown, drain the oil and set aside.

9. Heat the oil in a wok over high heat, add scallions, ginger and garlic slices and sauté until fragrant

10. Then quickly add the chili bean sauce and chopped pickled peppers, and slowly stir-fry over low heat to produce red oil.

11. Turn to high heat, add the fried duck meat into the red oil and coat it evenly.

12. Next, add cooking wine and soy sauce and continue to stir-fry evenly.

13. Then add the broth and salt. When the broth boils, simmer over low heat for 15 minutes.

14. Add the chopped lettuce at the end. I like the crispy feeling, so I put it in now and continue cooking for about eight minutes.

15. Finally, turn to high heat to reduce the sauce, add appropriate amount of chicken essence and white pepper powder.

16. Today's dish, lettuce and duck in red oil, is a heat-clearing and cooling food, suitable for summer consumption. Cooking with red oil, contrary to its light nature, guarantees a hot surprise for you.
