1. Ingredients: opium fish (1 flounder), onion, ginger, carrot, coriander, steamed fish soy sauce, and cooking oil in appropriate amounts.

2. Remove the internal organs, scales and clean the opium fish (I always ask the fish stall to process it for me).

3. Cut a few slanted cuts on the fish and sprinkle a little cooking wine.

4. Cut the green onion and ginger into shreds.

5. Place some shredded green onion and ginger on the bottom of the plate.

6. Place the fish on a plate and sprinkle shredded green onion and ginger evenly on it. My steamer is very big and it still couldn’t fit it in, so I had to chop it into two pieces.

7. Steam for 10 minutes, then loosely steam for 3 minutes before removing from the pot. Remove the cooked scallion and ginger shreds.

8. Chop green onion, ginger, carrot and coriander into shreds, and prepare soy sauce for steaming fish.

9. Drain the juice from the opium fish and sprinkle with chopped green onion, ginger and coriander.

10. Preheat the pan and pour in cooking oil to heat.

11. Pour the hot oil evenly over the fish.

12. Pour appropriate amount of steamed fish soy sauce.
