7.7. Pour the cooked milk into a large container, scoop up the milk with a large spoon and pour it back, repeat this action 10-20 times. This process is called "milk collision". The purpose is to cool it down appropriately and let in air. When the temperature drops to 70-80 degrees, you can pour it into the bowl of ginger juice.

8.8. Pour into the bowl quickly without stirring. Otherwise, the bottom will solidify but the top will not.

9.9. Wait for 2-3 minutes for it to solidify naturally, sprinkle with sugar or scoop in a spoonful of honey, and then you can eat it. It's tender and smooth, and tastes great!
