4. Remove the bones from the chicken thighs and cut off the white tendons underneath, leaving the chicken skin behind.

5. Cut the processed chicken thighs into small pieces, put them into a clean container, add cooking wine, white pepper powder, light soy sauce, and shredded ginger and marinate for 15 minutes.

6. While the chicken is marinating, use scissors to gently cut a slit in the rennet tofu at the red line. Remember not to tear off the sealed packaging on the tofu.

7. Put the rennet tofu into clean water, the water level should cover the tofu box, and gently squeeze the tofu with your hands.

8. At this time, you can check whether the tofu is stuck to the tofu box. If not, tear open the package and see that the basically complete tofu comes out. Take it out carefully and cut it into small pieces.

9. Add appropriate amount of water to starch to make water starch and set aside.

10. Pour a proper amount of oil into the pan, heat it, then add the marinated chicken pieces and stir-fry.

11. After the color changes, continue to stir-fry for about 2 minutes and serve.

12. Add oil to the pan and stir-fry scallion, shredded ginger and minced garlic.

13. Turn to low heat, add Pixian bean paste and stir-fry until red oil comes out.

14. Add the previously fried muscle pieces and stir-fry evenly.

15. Add tofu, add half a bowl of water and bring to a boil, then pour water starch along the edge of the pot.

16. Cover the pot and let the soup cook until it thickens slightly.

17. Before serving, sprinkle with appropriate amount of chicken essence and chopped green onion.

18. After adding the bean paste, remember to turn to low heat and stir-fry until fragrant. Heating it over high heat will make the bean paste taste very pungent and very salty. This is why some people don’t like bean paste.
