12. Sauce: salt; sugar; chicken essence; cooking wine; soy sauce; a lot of minced garlic. Don’t add vinegar yet. Pour it directly into the pot later.

13. Leave the meat in the pan and add the green garlic and red pepper. Stir-fry quickly.

14. Pour in the sauce, stir fry twice, pour vinegar along the edge of the pot and stir well.
