Ingredients: Main ingredient: shrimps, auxiliary ingredients: northern tofu, seasoning: salt, onion, sugar, water starch, sesame oil, soy sauce, chicken essence, cooking oil

Method 1. Cut the tofu into small pieces, blanch them in boiling water and put them on a plate. Soak the shrimps and drain them. Wash and chop the green onions; 2. Light a wok and pour in oil. When the oil is 50% hot, add shrimps and chopped green onions, stir-fry until fragrant and pour into a plate; 3. Put oil in a wok, heat it, pour in the fried shrimp, tofu cubes, sugar, salt, soy sauce, sesame oil, and chicken essence. After the oil boils, thicken with water starch, stir well and serve.

Method 2

Ingredients: 10 shrimps, 1 scallion, appropriate amount of ginger, 1 piece of tender tofu, appropriate amount of minced garlic, appropriate amount of white pepper, appropriate amount of salt, appropriate amount of rice wine. Method: 1. Brush the shrimps clean with a toothbrush and remove the shells. Leave the shells. Cut the scallions into beads. Chop the ginger into minced and shredded pieces (use the shredded ginger to stir-fry the shrimp heads). Chop the tofu into pieces. 2. Stir-fry the shrimp heads: use appropriate amount of oil. Saute the shredded ginger. Add the shrimp shells and stir-fry. Stir without burning. Stir until the shrimp shells are dry. The pot is also a little dry. The taste is already very rich. Add about a bowl of water and boil. The aroma of the shrimp just fried will be released into the water. Then pour out the whole thing for later use. 3. In another oil pan, saute the minced ginger, scallion white, and minced garlic. Add the shrimp and stir-fry until slightly fragrant. Pour back the soup from the fried shrimp heads (do not filter the shrimp heads). Add the tofu and simmer until it is well-flavored (if you are afraid that the shrimps are too old, you can pick them out first). Add salt, white pepper, and rice wine to enhance the flavor. 4. Finally, add the green onion to the pot and stir slightly (if the shrimps are taken out, put them back at the end) and remove from the pot.
