Suguo is a famous dish in Zibo, Shandong. It is often eaten during the traditional Spring Festival. It is said that this dish has a long history. It contains a lot of vinegar, so the meat and fish bones are often crispy and soft. Later, it was renamed Suguo dish. Ingredients: kelp, lotus root, Spanish mackerel, pig's trotter, onion, ginger, pig skin, pork belly, cabbage, pork spine, frozen tofu Seasoning: brown sugar, vinegar, soy sauce, cooking wine, salt, water

Method 1. Wash the kelp and cabbage and set aside; wash the lotus root and slice it not too thin; wash the pig skin, pork spine and pig trotters, put them in a pot of clean water and boil until the blood comes out, remove them, wash and set aside; remove the gills, stomach and intestines of the Spanish mackerel, wash and cut into sections for later use; cut the green onion into sections, peel and slice the ginger for later use. 2. Prepare a large pot. First, spread the cabbage on the bottom of the pot, with the stalks facing down and the leaves facing up. Second, cut the pork skin into inch-wide pieces, wrap it in kelp, and place it on the cabbage. Make a space in the middle of the pot and put the scallion and ginger in. Third, sprinkle the lotus root slices on the kelp. Fourth, spread the Spanish mackerel slices. Fifth, spread the pork bones and trotters. 3. Prepare the soup: half a can of salt, the same amount of brown sugar and slightly more salt, one-third of a bottle of vinegar, and about the same amount of soy sauce, cooking wine and vinegar. Mix well in a large basin of water. Adjust the saltiness, sweetness and sourness according to your taste. 4. Pour the soup into the pot, and be sure to use cabbage to separate the edge of the pot, otherwise the ingredients will stick to the pot; put the pot on the fire, cook on high heat for about 40 to 50 minutes, then cook on medium heat for about 1 hour, and then simmer on low heat for about seven or eight hours and it will be OK!

The main ingredients include cabbage, lotus root, kelp, spareribs, frozen tofu, pig's trotters, chicken, fish, meat, etc., and the seasonings include vinegar, sugar, rice wine, soy sauce, onion, ginger, salt, etc. The arrangement of the ingredients in the crispy pot is also quite particular. Generally, cabbage is used to cover the bottom of the pot, and meat, kelp, lotus root, etc. are placed in the middle. Tofu and cabbage are then placed on the top before covering the pot.

When making it, first boil it with high heat, then simmer it with low heat until the bone spur is soft and softened. This process takes about 10 hours or longer.
