The simplest cookie recipe

Preparation:

1. Cut the butter into small pieces and take it out of the refrigerator half an hour in advance to soften it.

2. Take the animal whipped cream out of the refrigerator in advance and return it to room temperature.

50g powdered sugar

115g low gluten flour

Milk powder 5g

42g animal whipping cream (can be replaced by whole egg liquid)

1. Sift the milk powder and low-gluten flour through a mesh sieve into a large bowl and set aside.

2 Beat the softened butter with an electric mixer at low speed.

3 Add powdered sugar and beat with an electric whisk at low speed first and then at medium speed until smooth.

4 Add the animal cream in two batches, beating at medium speed until smooth each time before adding the next batch.

5 Beat until the butter doubles in volume and turns light yellow, then add the sifted flour.

6Use a rubber spatula to mix the oil and flour until no more flour is visible.

7Attach the piping bag to the piping nozzle.

8Put the piping bag in a tall cup and fill it with cookie batter.

9 Use a scraper to push the batter toward the nozzle.

10 Place a silicone mat on the baking tray, hold the piping bag in your left hand, and squeeze with your right hand to squeeze out round cookies in a clockwise direction.

11 Keep a certain distance between the squeezed cookies because the cookies will expand during baking.

12 Preheat the oven to 170 degrees, set the upper and lower fire to 170 degrees, place the baking tray in the middle layer, and bake for 23 minutes.

13 The freshly baked cookies are still soft. Move them to a baking tray and let them cool, then they will become crispy.

Tips

Production experience:

1. The butter must be softened first, and the animal cream must be at room temperature, or heated to 30 degrees in hot water. Otherwise, adding cold cream to the whipped butter will make the butter hard, making it difficult to squeeze the batter. In winter, butter hardens.

2. The cookies will color quickly in the last 5 minutes of baking, so you need to watch over them next to the oven. Once it starts to color, take it out immediately. The center of the freshly baked cookies may not be crispy enough, but it will become crispy after cooling down. If it is still not crispy, it means it has not been baked enough. Put it back in the oven and bake at a low temperature of 150 degrees for 5-10 minutes.
