How to make braised vegetable cold noodles

1. Prepare the seasonings. Chongqing noodles, whether it is small noodles or other, must have rich seasonings!

3. Boil the water

4. Put the noodles in and cook until they are cooked through the center. Don’t cook them for too long, as they will not taste good if they become soft.

5. Put the noodles in a colander (actually my colander was thrown away by my mother), then add vegetable oil and scallion oil. You must add vegetable oil here so that the noodles will not stick together!

6. Turn on the fan to high power, and then keep using chopsticks to loosen the noodles. Keep blowing the noodles to cool them down and loosen them up so that they won't stick together and become chewy.

7.This is the mixed noodles.

8. Then start preparing the seasonings. This step is the most important. The proportions and amounts must be fixed, otherwise the taste will be very different. Steps: ginger and garlic water, light soy sauce, chili pepper, sesame oil, pepper powder, MSG, peanuts, sugar, pig ears, walnut meat, and chopped green onions!

9. In this way, a bowl of Chongqing-flavored braised cold noodles is ready!
