10. Cover the pot and bring to a boil over high heat, then let it boil for about 5-8 minutes. At this time, the soup will turn slightly white.

11. Turn down the heat and simmer for about 30 minutes. Use a spatula to crush the fish head and bones during the cooking process to allow the meat attached to the bones to dissolve into the soup. The soup will be thick and milky white.

12. Use a fine strainer to filter out the residue in the soup (mainly fish bones)

13. Cut tofu pudding into 4cm square pieces

14. Pour the filtered fish soup into a small casserole or soup pot

15. Turn on high heat to make the soup boil, and put the marinated fish slices into the boiling fish soup one by one

16. When the soup starts to boil again, add the tofu pudding and cook for 2-3 minutes. Turn off the heat and sprinkle with chopped green onions.
