Pumpkin Vegetable Soup Recipe

3.2 Also cut the onion into small slices, add a small amount of olive oil to a cast iron pot, add the onion, and sauté over medium heat until fragrant.

4. Using a hand blender, blend the vegetable soup until it is pureed and all the vegetables are blended. If you don't have a hand blender, blend it in a blender and then pour it back into the pot.

5. Finally, season the soup with salt and freshly ground black pepper, add the chopped parsley leaves and stir well.
