Overview of Potato Stir-fried Rice Balls

Potato stir-fried rice balls are a well-known snack in southeastern Longdong, Gansu, mainly distributed in Wudu, Longnan and Huating, Pingliang. Jiaotuan is a meal that people often eat when they are living in poverty. Now it has gradually developed into a famous local snack. It used to be a home-cooked snack for farmers, but now it has become one of the local specialty snacks that is popular among the public.

How to make potato dough

Main ingredients: potatoes, sauerkraut.

Method 1

Select medium and low-sized potatoes with full surface and less water, steam them, peel them and let them cool. A small amount can be poured into a stone nest (stone mortar) and pounded into fine pieces with a wooden stick, while a large amount can be poured into a sturdy wooden trough and pounded into fine pieces with a wooden hammer. When eating, you can pour seasoning vinegar water or sauerkraut juice water, and add mashed garlic, chili, chopped onion, leek, etc. It tastes very good and has the effects of reducing inflammation, relieving heat and treating constipation.

After peeling the potatoes and stewing them in a pot, they are placed in a wooden barrel - actually a hollow tree stump. A good laborer will then use a hammer with a long handle to hit them hard for a while, then put them in a bowl and sprinkle with coriander, chili, sesame oil and salt.

Method 3

Choose potatoes that are full on the surface and less water, then find a chopping board and a smooth cylindrical wine bottle. Next, choose an appropriate amount of potato cubes, and then spread the determined amount of potato cubes flat in the middle of the chopping board. Hold both ends of the wine bottle horizontally with both hands to squeeze the potatoes on the chopping board to make them into smaller and evenly broken pieces. Then use the wine bottle to mash the potatoes until you feel the stickiness of the potatoes after they are mashed.

How to eat

There are two ways to eat it: hot or cold.

1. To eat hot, put it into sauerkraut juice and cook it briefly. Put it into a bowl together with the sauerkraut juice and add salt, oil and chili peppers before eating.

2. Serve cold, put into a bowl and serve in a vinegar soup made of melted vinegar, garlic in oil and chili.
