Sichuan hot pot rabbit recipe

When talking about Sichuan cuisine, chili peppers come to mind. Sichuan has many famous dishes. And he has a special liking for rabbits. Some people say that Sichuan is hell for rabbits, and Sichuan people are the biggest nemesis of rabbits! Here, at least 200 million rabbits are "killed" every year in a variety of ways: spicy braised rabbit heads, stir-fried rabbit cubes, cold braised rabbits... So how do you make a spicy and delicious Sichuan hot pot rabbit at home?

Step 1: Rabbit is an annual grass-eating rabbit with firm and chewy meat. Wash it and set aside. Add cooking wine to remove the fishy smell. Add egg white and cornstarch to make the rabbit meat more tender. Chop the garlic cloves, green onions and coriander.

Step 2 recommends Sanwu hotpot base, which has a strong stomach-stimulating taste and was recommended by my brother-in-law, who is a chef (haha, a bit confusing). Anyway, this brand is right. It's also okay if you have been eating hotpot ingredients that taste good for a long time. Sichuan people love spicy food, and Sanwu is definitely flavorful and spicy enough. We made half diced rabbit, a big pot of vegetarian dishes, and used half of the three-five base.

Step 3: Wash and cut all the ingredients and put them into the pressure cooker. We put lotus root slices, potato slices, yam, bamboo shoots, bracken, and any other vegetables you like.

Step 4: Heat the pan with oil, add the scallions and sauté until fragrant, then add half of the hot pot ingredients. Pay attention to the heat and fry until fragrant. Then add the rabbit and fry until it is cooked.

Step 5: Pour the fried rabbit into the pressure cooker, add appropriate amount of water, just enough to cover the ingredients, and cook for 20 minutes.

Step 6: Remove from the pot and put some bean curd skin at the bottom of the pot. The bean curd skin can be eaten raw, so it does not need to be put into the pressure cooker. Put coriander on the plate, it's simple and easy to learn

Tips

1. This dish does not require any seasoning, such as bean paste, star anise, dried chili pepper, salt, chicken essence, because the hot pot ingredients are too flavorful.

2. If you like spicy food, you can pour a little green pepper oil when serving.

3. If you add a lot of young ginger shreds, it will be spicier and more like Zigong country rabbit. You can also try it~
