Hot pot noodles are simple, convenient and delicious, and it is a delicacy that can be easily made at home. Hot pot noodles are a favorite of many people. But the biggest problem with hotpot noodles is that they are too spicy. Although your mouth may feel good after eating them, your stomach may not feel so good. Every time I eat hotpot, even if my stomach is full, I still can't help but put a few in when I see the sweet potato noodles. This is probably because I love hotpot noodles so much.

Yihong soup is a typical Chongqing hotpot base soup. This soup is widely used and is used in most types of Chongqing hotpot. Its characteristics are: rich taste, thick juice and flavor, spicy and palatable, fresh and sweet. Ordinary households can use the following simple recipe: 1500 grams of pork broth, 250 grams of butter, 125 grams of bean curd, 30 grams of sugar, 50 grams of ginger, 10 grams of pepper, 15 grams of salt, and 50 grams of rice wine. This recipe is practical and simple, with a slightly weaker aroma, but the basic flavor is still strong.

1If you want to eat this bowl of fragrant noodles within 10 to 20 minutes, you must cook the noodles quickly. So, put the sweet potato vermicelli (or other vermicelli will also work) in cold water and cook for about 5 minutes. Cook until the vermicelli becomes soft. Sweet potato flour is chewy and will not become mushy even after being cooked for a long time. I recommend trying it.

2 While the powder is cooking for a few minutes we can prepare the ingredients. 1. Mince some meat (if you don’t have minced meat, you can cut some ham or pork belly to increase the meatiness), add salt and marinate for a while;

3 Chop the onion and garlic, cut the onion into short pieces and shred it; break off a few leaves of the cabbage, wash and tear them into slices.

4After the vermicelli is cooked, set it aside. Heat a pan with a little oil and fry the minced meat. Fry until the minced meat releases oil, then scoop out and set aside.

5. Put 20 grams of oil in the pot. When the oil is 70% hot, add a small piece of hot pot ingredients and stir-fry over medium heat. Add ginger, garlic, and onion. Stir-fry until all the hot pot ingredients are melted, add 2 bowls of water and add chopped green onions.

6 After the water boils, drain the cooked sweet potato vermicelli and add it directly to the hot pot soup. Cook on medium heat for about 1 minute. Since the vermicelli has been cooked before, there is no need to cook it for a long time now. Add the cabbage leaves and cook until soft. Add salt.

7 Take a large bowl, put a little soy sauce and a few drops of vinegar in it, and if you like spicy taste, you can add some pepper powder. Pour all the cooked vermicelli and soup into a bowl, and sprinkle the fried minced meat and coriander on the noodles.

8 Start eating.
