1. Cut the chrysanthemum into oblique slices and then into shreds, cut the carrots into shreds, and remove the roots of the oyster mushrooms. Boil water in a pot, add 1 teaspoon of salt and a few drops of oil, add shredded carrots and shiitake mushrooms, blanch them and rinse them with cold water. Add bean sprouts, blanch them and immediately rinse them with cold water for later use. Boil another pot of water, cook the noodles until 80% done, remove from the pot, and put them in cold boiled water to cool thoroughly for later use.

2. Squeeze the juice of a lemon (about 2 tablespoons of juice), add 2 teaspoons of sugar, 1 tablespoon of soy sauce and 150ml of cold boiled water and stir until the sugar dissolves

3. Put the cold noodles into a bowl, place the processed cucumber, carrot and shimeji mushrooms around it, pour in the sauce just prepared, and then place a few pieces of seaweed.
