Cooking noodles with gravy:

1. Put an appropriate amount of peanut oil in the wok, then add a few pieces of rock sugar, stir constantly with a spatula over low heat until deep red bubbles appear.

8. When the minced meat and green beans soup becomes thick, add a small spoonful of vinegar, bring to a boil over high heat and then turn off the heat.

9. Add noodles, gravy, and eat!

Tips :

1. The blanching of diced meat is purely a personal preference. Every time I see the foam on the diced meat, I feel uneasy if I don’t blanch it.

2. Regarding the step of adding vinegar in step 8, it is mainly for Mr. Xuan, a native of Shanxi Province, to wash it properly. Those who don’t like vinegar can skip it. If you like to add vinegar, try to add it at this time. The sour taste will be milder than adding vinegar directly into the bowl after boiling. [
