Ingredients and steps for making mooncakes

Mooncakes are a very traditional food in my country. As they symbolize reunion, they are a must-have food during the Mid-Autumn Festival. In the past, mooncakes only differed in taste, but nowadays, mooncakes have different production techniques and the taste has changed a lot. Many pastry lovers make various kinds of mooncakes by themselves and can add ingredients according to their preferences. So, what are the materials and steps to make mooncakes?

1. Red Bean Paste Snow Skin Mooncake

Ingredients: 45 grams of glutinous rice flour, 35 grams of sticky rice flour, 150 grams of red bean paste filling, appropriate amount of hand powder (fried glutinous rice flour), 20 grams of salad oil, 20 grams of starch, 50 grams of powdered sugar, and 185 grams of milk.

1. Add powdered sugar to milk and mix well.

2. Sift in the flour and mix into a thinner batter. Let sit for 30 minutes.

3. Steam in a steamer for 15-20 minutes. After steaming, stir it into a batter with chopsticks and let it cool.

4. Put hand powder on your hands, take 70g of snow skin, roll it into a ball and flatten it, then fill it with 30g of red bean paste, and use your thumb and index finger to push upwards to cover the filling and seal it.

5. Sprinkle some hand powder on the wrapped ball, put it into the mold, flatten it and take it out.

6. Refrigerate for more than two hours.

Ingredients: 1 egg, 10 grams of butter, 80 grams of milk powder, 30 grams of glutinous rice flour, 30 grams of chestnut flour, 100 ml of milk, 5 spoons of sugar, 10 grams of oil, appropriate amount of cake flour (glutinous rice flour is cake flour that is cooked by heating it in a microwave), appropriate amount of custard filling.

1. Heat the butter in the microwave for 10 seconds until soft.

2. Mix all the ingredients (1 egg, 3 spoons of white grain, 1 spoon of chestnut powder, 10 grams of butter, 80 grams of milk powder) evenly.

3. Then steam the mixed custard liquid, stirring every 5 minutes, and steam for 20 to 30 minutes until cooked.

【moon cake】:

1. Mix glutinous rice flour, chestnut flour, milk and sugar until there are no particles. Steam for 20 minutes until cooked.

2. After it cools down a little, add oil and knead it into a soft and smooth dough. Wrap it with plastic wrap and put it in the refrigerator to chill for about an hour.

3. After taking out the dough, divide it into small doughs of appropriate size. Roll the filling into small balls. The ratio of snow skin dough to filling is about 3:5.

4. Roll out the dough through plastic wrap to form a thinner edge and thicker middle crust, wrap the filling in it, coat it with cake flour and press into a mold.

5. After removing from the mould, use a small broom to sweep away the powder on the cake, and the beautiful snow skin mooncake is ready.
