1. Thaw the chicken wings and cut into pieces on both sides

2. Thaw and clean the chestnuts

3. Slice the ginger and rinse the star anise and cinnamon.

4. Pour a small amount of oil into the clay pot and heat it over low heat. When the oil is 60% hot, add ginger slices, star anise, and cinnamon and stir-fry until fragrant.

5. Add the chicken wings and fry slowly over low heat until the skin on both sides is browned. This process takes a little longer, about 15-20 minutes, so be patient and fry one side slowly before frying the other side.

6. Add a spoonful of soy sauce

7. Add half a spoon of dark soy sauce

8. Add a handful of rock sugar and stir until completely dissolved

9. Finally, add salt, chicken essence, pepper and water, mix well, and boil over high heat.

10. After the water boils, add the chestnuts and stir well to cover the chestnuts.

11. Cover the pot, bring to a boil over high heat, then turn to low heat and simmer for about 25 minutes.

12. Finally, remove the chestnuts and leave the chicken wings. Turn the remaining soup to high heat until it thickens and evenly coats the chicken wings. Then serve.
