1. Remove the stems of the peppers, clean them and drain the water. Put them into a food processor and crush them with a blender.

2. Blend the chili peppers several times and set aside. Blending a small amount each time will make it more even.

3. Put the chopped green onion and ginger slices into the food processor and blend them into a paste

4. Set aside the scallion and ginger paste

5. Cut the pork into small cubes before it is completely thawed

6. Add a little peanut oil to the diced meat and mix well to lock in moisture.

7. Heat the wok over low heat, add more peanut oil, and add the diced meat.

8. Stir-fry until the diced meat changes color and set aside

9. Don’t turn off the heat. After the diced meat is taken out, add the scallion and ginger paste and stir-fry until the aroma comes out.

10. Add the chopped chili and stir-fry. Keep it on low heat. If you feel that there is not enough oil, you need to add some more. The chili sauce is very oily. I added it several times during the stir-frying process.

11. The process of frying peppers takes a long time, about half an hour. I didn’t look at the details, but you have to keep stir-frying over low heat until the color of the peppers changes from red to dark red, and the color of the oil also turns dark red. It is almost done when you can smell the spicy aroma. Because fresh peppers are used, if the peppers are not thoroughly fried, the taste will be very strange and the chili sauce made will not taste good.

12. Now you can add the fried minced meat and 2 spoons of bean paste

13. Continue to stir-fry over low heat until the aroma of chili sauce comes out. At this step, I added some oil to the pan.

14. After it has cooled completely, pour it into a clean, water-free glass bottle for storage and enjoyment
