1.1 Put the meat in a pot, add onion segments, ginger slices, star anise, and appropriate amount of water. Bring to a boil over high heat, then pour in cooking wine and simmer over low heat for half an hour, until the meat is 80% cooked and can be easily pierced with chopsticks. (Skip off any foam during cooking)

2.2 Ingredients: Pork tenderloin seasoning: scallion, ginger, star anise, cooking wine, sugar, curry powder, soy sauce, salt, appropriate amount

3. After the meat is cooked, take it out and drain the water. Tear it into thin strips, making each strand as uniform in thickness as possible.

4. Spread the shredded meat evenly in the pot and turn the heat to minimum. Add salt, soy sauce, cooking wine, sugar and curry powder and stir-fry continuously.

5. Stir-fry continuously for about 20-30 minutes until the shredded pork becomes drier and fluffy and golden in color.

6. Features: dry, soft, crispy, soft but not greasy.
