1.Put all seasonings in a small bowl and mix well to make the sauce.

2. Peel the grass shrimps and coat them with mung bean starch and a little water. Make sure to mix well to avoid oil splashing during frying.

3. Pour oil into the pan and heat it to 50% hot, about 150 degrees, then pour 2 teaspoons of oil into the battered shrimps and mix well. It is important to add the oil just before putting them into the pan.

4. Then put the shrimps into the hot oil one by one, change to low heat and fry until the inside is cooked through, then change to high heat and fry briefly until golden brown and remove from the pan.

5. Heat a little oil in another pot, put in the fried shrimps, quickly add the sauce, stir-fry quickly twice and remove from the pan. This step is best completed within 5 seconds. If you take too long, the skin of the fried shrimps will become soft and mushy, and the dish will be considered a failure.
