9. After the buns are wrapped, put them into the steamer for the second fermentation, which takes about 20 to 40 minutes. It is hard to say how long it takes in winter. Today it took almost 50 minutes. You need to be patient, otherwise the steamed buns will not be soft enough and taste bad!

10. After the water boils, steam on medium heat for about 15 minutes. 12 minutes before, insert a chopstick between the lid and the steamer to allow some steam to escape and cool air to enter. This will prevent the buns from sinking and looking ugly due to the huge temperature difference between the two after steaming.
