First, prepare the materials. A potato, onion, ginger, garlic, red pepper and Sichuan pepper. Then, cut the potatoes into thin strips and soak them in clean water to remove the starch. Then chop the onion, cut the pepper into small pieces, chop the garlic, cut the red pepper into shreds, and chop the ginger.

Here's a little trick for shredding potatoes. First cut the potatoes into large thin slices, and then cut the potato slices, so that the cut potato shreds will be thin and even. But remember this.

The first step is to pour oil into the pot and turn on low heat. Then sprinkle two or three peppercorns in and sauté them until fragrant. After the aroma of the Sichuan peppercorns comes out, take them out and discard them.

The second step is to add onion, ginger, minced garlic and chili segments to the bottom oil in the pot and continue to stir-fry until fragrant. At this time, you can add the shredded potatoes.

Step 3. After stir-frying for about 2 minutes, take a spoonful of vinegar and pour it along the edge of the pan and continue to stir-fry the shredded potatoes. Then add the shredded red pepper and stir-fry evenly. Finally, add chopped green onion, appropriate amount of salt, sugar and chicken essence to season.

1. Slice the bacon, peel the potatoes and cut them into small pieces, and grind the garlic and ginger into puree.

2. Fry the bacon until fragrant, add the potatoes and stir-fry, add a little minced garlic, minced ginger, chicken powder, salt, pepper, and seasoning

3. Wash the rice, put it in the rice cooker, and add water as usual to steam rice.

4. Add the fried potatoes and bacon, press the button, and simmer for 10 minutes after steaming.

Tips

1) Choose bacon with more fat for better flavor. I used a lean bacon this time. 2) Add a few drops of soy sauce when steaming rice to make it taste better. This rice must be full of flavor to be delicious. 3) Adding a little bit of minced ginger and minced garlic can also enhance the flavor and remove greasiness.
