Matcha Chiffon Cake ~ 8-inch recipe

7. Stir evenly the matcha egg yolk paste and set aside

8. Add appropriate amount of salt and 2 drops of white vinegar to the egg whites

9. Use a whisk to beat the egg whites until they become bubbly and then add one third of the white sugar.

10. Continue to beat the egg whites until they expand and become textured, then add another one-third of the sugar.

11. Add the last bit of white sugar and continue beating.

12. The beaten egg whites are hard and foamy, the whisk is triangular, and the lines are clear and do not disappear.

13. Preheat the oven to 125 degrees for 10 minutes

14. Add the egg whites in three batches. Take out one third and stir quickly to mix evenly. Do not make circles to avoid defoaming.

15. Take out one-third of the egg whites and mix evenly.

16. Add the last third and stir evenly.

17. Stir the Matcha Cake Batter

18. Pour the matcha cake batter into an 8-inch removable bottom mold and gently shake out the bubbles. You can also use a toothpick to draw a Z shape to eliminate the bubbles.

19. Place in the lower layer of the oven

20. Bake at 125 degrees for 60 minutes. The oven temperature can be adjusted according to the temperature of your own oven.

21. The time has come, it’s out!

22. After coming out of the oven, shake it a few times and then turn it upside down.

23. After it cools down completely, you can remove it from the mold (I was a little anxious and removed it from the mold before it was completely cooled down, which was a bit ugly). I am still very satisfied with the height.
