How to make chocolate mousse (8 inches)

3. Add 8 grams of cocoa powder to 40 grams of hot water and mix well.

6. Add 30 grams of sugar to the egg whites three times and beat with an electric whisk until dry and foamy. Preheat the oven to 175 degrees.

7. Add one-third of the egg white paste to the batter and stir evenly (do not stir in circles as it will easily defoam), then add the rest of the egg white paste and stir evenly. Bake in the middle layer of the oven for 25 minutes.

8. Soak the gelatin sheets in cold water until soft

9. Soften the cream cheese at room temperature and beat it with a whisk until it is smooth. It must be fully softened, otherwise there will be particles at the end. Beat the whipped cream with a whisk until lines appear. You can add a little white sugar to the cream cheese and mix it thoroughly.

10. Add milk and chocolate to hot water and heat until melted.

11. Add softened gelatin sheets until melted. After cooling slightly, add to the butter in the previous step and mix well.

12. Divide the chocolate cake into two pieces, remove the edges of the cake, and put a layer of cake on a layer of mixed cream, and put it in the refrigerator for four to five hours.

13. If you want to make a coffee mirror on the top, mix 15 grams of instant coffee powder with 100 ml of hot water, add gelatin sheets softened in cold water and stir until melted, cool until thick, pour into a mold and freeze for a few hours, remove from the mold, sift cocoa powder, and decorate.
