The method of making air-dried drunken fish is extremely simple. It is a very simple and easy-to-learn dish. In less than half an hour, the delicious food can be presented to you.

1. A fresh grass carp. Please ask the buyer to help you kill it and cut off its fins.

2. Wash the fish thoroughly, especially remove the black mucous membrane inside the fish belly, and then remove the fish head;

3. Place the fish flat on the chopping board, cut horizontally from the tail to separate the fish meat from the bones on both sides of the fish body;

4. The container for marinating fish is not very big, so divide the fish into two parts;

5. Pour in high-proof liquor, rub gently with your hands, and evenly apply it on the fish;

6. Cut the green onion and ginger into shreds;

7. Put the shredded green onion and ginger on the fish, and pour in the marinated sauce until it covers the fish;

8. Put it in the refrigerator for 24 hours, take it out, remove the scallion and ginger shreds, and tie them with string;

9. Hang it in a cool and ventilated place to air dry. This process takes 3-5 days;

10. Air-dried drunken fish;

11. Wash a piece with warm water, cut the green onion and ginger into shreds, and spread them on the bottom of the plate;

12. Place the washed fish pieces on the shredded green onion and ginger, and sprinkle the shredded green onion and ginger evenly on the fish pieces;

13. Put the fish into the steamer and steam for 10-12 minutes after the water boils. The time depends on the size of the fish pieces. Let it cool slightly after removing from the heat. Cut into pieces and place on a plate before serving.
