1. Well, prepare the ingredients.

2. Pour sesame oil into a pan and heat it. When it is about 60% to 70% hot and a little smoke appears, you can turn off the fire. Let the hot oil cool.

3. Pour water, brown sugar and rose into a pot and heat to boil.

4. Boil the sugar water until it bubbles and turn off the heat when all the sugar is melted.

5. Add baking soda and baking powder to the flour with a stirring spoon, dissolve the alkali with 3 times the amount of water, pour into the sugar water and stir well. Let the sugar water cool down until it is not hot to the touch, then pour it into the flour. Pour the syrup into the flour as well.

6. Mix the flour with chopsticks and knead it into a smooth dough. Then cover the pot and let it soak for 30 minutes.

7. The dough that has been sugared becomes bigger and softer.

8. Divide the noodles into small round pieces. A standard mooncake is made of 5 cakes using 1 jin of flour. When making it at home, the size of the dough should be determined according to the size of the oven.

9. Sprinkle a small amount of white sesame seeds on the chopping board and dip the smooth side of the dough into the sesame seeds.

10. Preheat the oven to 200 degrees for 5 minutes, then place the mooncake dough on the baking tray and bake on the middle layer for 25 minutes. Because of the differences in ovens and the different sizes of pancakes from different brands, the specific time needs to be observed and adjusted up or down based on actual conditions.

11. The mooncakes fill the house with fragrance after they are baked. You can taste them while they are hot, but this is not the time when the mooncakes taste the best.

12. Put the mooncakes in a jar and place it in a cool place. This process is called oil recovery. In the past, we would make a lot of mooncakes during festivals and store them in jars. They would last for several months without drying up.

13. After two or three days, the mooncakes will become very soft, and the oil will seep out from the inside, making them especially delicious.
