CCTV7 "Food Wheel" Mapo Tofu Recipe

1. Stir-fry the minced beef, then add cooking wine, minced beef, minced ginger, minced garlic and bean paste.

2. Cut the tofu into 1 cm cubes and blanch them in warm water to remove the fishy smell.

3. Stir-fry the beef filling until crispy. Add homemade red oil, vegetable oil, minced beef and Pixian bean paste into the pot in turn. Stir-fry thoroughly. After the aroma is released, add cooking wine to remove the fishy smell and enhance the color. The amount of tofu and bean paste is important: add about 4 spoons of bean paste to 2 boxes of tofu.

4. Turn to low heat and add chili powder, fermented black beans, ginger, garlic, appropriate amount of water, light soy sauce and dark soy sauce in turn to brighten and enhance the flavor.

5. Add the blanched tofu and simmer over low heat for about 2 minutes.

6. Add starch and thicken in three times to make a thick soup.

7. Pour pepper oil on the mixture to enhance the flavor. After turning off the heat, continue heating with the residual heat for about 10 seconds.

8. After serving, drizzle with pepper oil, pepper powder and chopped green onion to add the finishing touch.

9. It’s out of the pot!
