How to make low-sugar white steamed bread in a bread machine

1. Dissolve yeast and sugar in warm water

2. Put the yeast and syrup into the bread machine. Remember to only put about 150 grams of flour 1 at first. Wait until it is almost mixed, then gradually add flour 1 in batches.

3. As for the kneading time, I use a bread machine and it takes about 20 minutes in total. When the dough is basically smooth and all the dry flour is absorbed, you can pour it out.

4. After taking it out, you need to add flour 2 in batches and knead until the dough is smooth.

5. Cut into small dough pieces of 65-70 grams each. (My 28cm steamer can hold 7.)

6. Knead each small dough separately. I fold it from the outside to the center and turn the dough with my left hand, just like making dumplings. Repeat 9 times and then roll it into a ball.

7. Put it in the steamer, cover with plastic wrap and ferment for 30 minutes. Just press lightly until the dough recovers quickly.

8. Boil the water in the steamer first, then put the steamer in. Turn the induction cooker to level 7 and set the timer for 15 minutes. (The maximum level of the induction cooker is 9, and the water will splash out, so I always use level 7. The time depends on the size of the dough. I usually make dough between 65-70 grams, so 15 minutes is enough.)
