How to make cream buns

1. Put all dough materials except butter into the mixing bowl, start the dough kneading program for 15 minutes (usually it is started once and butter is added after 15 minutes, but I started this step twice, that is, 30 minutes. Some bread machines have a dough kneading program of 20 minutes, and you can also use it only once), add a small piece of softened butter after the end, and continue to start the dough kneading program for 15 minutes

2. After kneading the dough, check whether the dough can be pulled into a thin film (I usually don’t check whether it has reached this level, but the dough is very soft because I don’t have high requirements for the dough). Then put the dough in a large container and cover it with plastic wrap for fermentation.

3. When the dough has fermented to 2.5 times its size, poke a small hole in the middle of the dough with your hand. If it does not shrink, it means the fermentation is complete.

4. Take out the dough, press and exhaust, divide into 10 equal parts, roll into a ball, cover with plastic wrap and relax at room temperature for 15 minutes (the relaxation time should be appropriate so that it will not shrink when rolled)

5. Roll the relaxed dough into a long tongue shape, turn it over and roll it up from the outside to the inside, pinching the top to seal it.

6. Roll all the dough and place them in the baking pan (I used Sanneng's 28 cream bun 28 baking pan, which is a little big. You can use a smaller one to make the buns more neatly baked)

7. The dough is fermented for the final time, about 45-50 minutes (depending on the temperature) until it doubles in size

8. Brush a layer of egg liquid on the surface (the egg liquid should be evenly applied to make the finished product beautiful after baking), sprinkle with almond slices, preheat the oven to 160 degrees, bake on the middle layer for 15 minutes
