How to cook spicy and sour duck offal

1. Tear off the yellow skin of the duck gizzards, wash off the grease on the surface and set aside.

2.1 Put the duck intestines into the boiling water pot and cook for two minutes, then rinse them with clean water. (This way there will be no smell and they are already very clean)

3.2 Wash the duck intestines with cooking wine and salt two or three times, and rinse them with clean water.

4.121 Cut the duck intestines into 3 cm long segments and cut the duck gizzards into pieces for later use.

6. Chop sour beans and prepare chopped peppers.

7. Chop the ginger and garlic, and cut the coriander into sections and set aside.

8. Marinate the chopped duck offal with appropriate amount of minced ginger, soy sauce, oyster sauce and cooking wine for a while

9. Fry the pickled cabbage without adding oil until the water is dry, then remove and set aside

10. Pour a proper amount of oil into the pot, stir-fry the garlic until fragrant, then pour in the duck offal and stir-fry over high heat.

11. After the surface of the duck gizzard turns white, pour in the chopped pepper and continue to stir-fry.

12. Then pour in the sour beans and stir fry evenly.

13. Add sour beans and stir-fry for two minutes, then add coriander and stir-fry for a while, then add a little light soy sauce and it is ready to serve.
