Braised horse-faced fish recipe

Ingredients: 1000g horse-faced fish Seasoning: salt, vinegar, rock sugar, chicken powder, 3 scallions, 4 slices of ginger, 3 cloves of garlic, 2 star anise, 6 peppercorns, 5 dried chilies, cooking wine, light soy sauce, dark soy sauce, coriander

1. Rinse the horse-faced fish with clean water and drain the water for later use

2. Put a small amount of oil in the pot, heat it to 60%, add ginger and garlic, sauté until fragrant, then add the fish

3. Fry over medium heat for two minutes, add cooking wine, then dark soy sauce for coloring

4. Add hot water to cover the fish, add pepper, star anise, dried chili, rock sugar, and orange peel, bring to a boil for 2 minutes, then simmer over low heat. After 10 minutes, turn the fish over and add a few drops of vinegar and soy sauce.

5. After stewing for another 10 minutes, add salt, chicken essence, and scallions, and cook over high heat until the sauce thickens.

6. Remove from heat and place on plate, add coriander

The purpose of adding vinegar in the middle is to make the fish meat easier to break, and it can dissolve the calcium in the food, which is beneficial for human absorption, and it also has the effect of removing the fishy smell. 3. Because my wife and I like dishes with stronger flavors, I put a little soy sauce in the middle, but it is also optional.
