Grilled salmon with sautéed zucchini

It's easy to eat, just open your mouth and chew. But making food delicious is difficult, at least most people can't do it. Why does this happen? Because they don't have a good solution. Today, I will teach you some tips on how to grill salmon with fried zucchini slices.

1.1 Mix all marinade ingredients in a large bowl and marinate salmon for 5 minutes. Preheat oven to 180C/350F/Gas 4. Line a baking tray with tin foil, place a baking rack on it, place the fish on the baking rack and bake in the oven for 10 minutes. Then take out the fish and carefully turn it over, lightly brush it with the remaining marinade in the bowl, and return it to the oven to bake for about 10 minutes until just cooked.

2.2 Add 2 tablespoons of rice vinegar, 1 tablespoon of olive oil, 1 tablespoon of brown sugar, and 1 tablespoon of whole grain mustard to a large bowl; mix well. Dice tomatoes, cucumbers and red onions into small pieces and add to a large bowl and mix with vinegar, sugar and oil to make salsa.

3. Use a vegetable plane to slice the courgette into long thin slices. Heat a little oil (1/2 tablespoon) in a non-stick pan, add the cucumber slices, add some sea salt and black pepper, stir-fry until soft and serve. Pour the remaining marinade in the bowl into a small pot and bring to a boil over low heat. Remove from heat. When the fish is just cooked, remove it from the grill and use a clean whisk to spread the boiling marinade over the fish. (Bake the fish for about 20 minutes)

4. Place half a plate of courgette slices on a large plate and place a piece of salmon on top. Serve with some tomato salsa on the side. A delicious summer snack is ready to be served.
