How to cook roasted mutton (local specialty)

6.1 Now cut the mutton fat into pieces and take some eight spices.

7.2 Cover and simmer on low heat for about 1 hour until the mutton is tender.

9.2 Put mutton fat, ginger slices and a little water in a wok and cook the mutton fat over medium heat.

10.1 Pour the mutton fat into the bowl through the strainer.

11.2 Take a heatproof bowl and add chili powder and appropriate amount of dried red pepper.

12. Stir evenly with chopsticks and the mutton chili oil is ready.

13. Let the cooked mutton cool down and cut it into palatable pieces.

14. Put the mutton and the original soup into the pot and bring to a boil, then add appropriate amount of salt to season.

15. Pour into a bowl and pour over the lamb chili oil.
