​What are the methods of cooking beef?

Beef is a kind of meat with relatively low fat content and rich in protein. It tastes firmer and juicier than other meats, so it is also loved by many friends. Common beef cooking methods include braised beef, stir-fried beef with green onions, etc.

Braised Beef

1. Cut the beef into pieces. Bring water to a boil in a pot. Add the beef and cook over high heat for 1 minute. Take out and wash.

2. Put the beef into the pot and add boiling water to cover the beef by 2 inches. Add cinnamon, fennel, and green onion.

Ginger slices, cooking wine. Cook on medium heat for 1 hour.

3. In another wok, add a little oil and sauté the garlic granules, add the spicy bean paste and Sichuan peppercorns.

Stir-fry cooking wine and soy sauce for 2 minutes.

5. Turn off the heat when the sauce is thick and the meat is tender.

Stir-fried beef with green onions

750 grams of shank meat (or cucumber meat), 120 grams of scallion, 50 grams of sesame seeds (roasted), 1 clove of garlic, 3 grams of minced ginger, 50 grams of soy sauce, 1 gram of chili powder, 40 grams of soybean oil, 6 dried mushrooms, 250 grams of rice, 25 grams of rice wine, 5 grams of refined salt, 2 grams of MSG, 10 grams of rice vinegar, and 25 grams of sesame oil.

1. Wash the beef shank, remove the fascia, soak it in clean water for 2 hours, remove it, drain it, cut it into small cubes, and then pound it into thin slices. Wash the scallion whites and cut them into rolling slices. 2. Put the beef in a porcelain bowl, add sesame seeds, minced garlic, minced ginger, 25 grams of soy sauce, chili powder, rice wine and MSG, mix well, and marinate to allow the beef to absorb the seasoning. 3. After the dried mushrooms are soaked in water, wash them, remove the stems and cut them into long strips. 4. Pour soybean oil into a wok and heat it to 80%. Add beef slices, mushroom shreds, and scallion shreds and stir-fry until cooked. Add minced garlic, rice vinegar, salt, and MSG, stir well, drizzle with sesame oil, and serve. 5. When eating, eat it with hot rice.
