How to make pickled pepper duck webs

1.1 Wash the duck webs and cut off the fingertips for later use

4. Boil star anise, cinnamon, pepper, ginger slices, cooking wine and rock sugar for 10 minutes; add duck feet and cook over high heat for 25 minutes.

5. Take out the duck feet, rinse with cold water to cool down, and quickly put into ice water; wait until the duck feet are completely cooled, take out and drain the water

6. Prepare a large bowl and pour out all the wild peppercorns; add a piece of rock sugar, appropriate amount of Sichuan peppercorns, a spoonful of balsamic vinegar, a spoonful of cooking wine, and the duck feet that have been drained of water. Cover completely with plastic wrap and place in the refrigerator to soak for at least 12 hours. When you are ready to eat, take it out and serve it on a plate.
