Orange and blueberry custard tart recipe

18. Mix the whipped cream, butter and orange juice and bring to a boil over low heat

19. Slowly pour into the egg yolk liquid, stirring constantly while pouring

21. Cook over low heat until thickened, and follow the custard sauce method

22. Add the softened and drained gelatin sheets and mix well. Set aside

23. Beat egg whites until neutral foam

24. Add sugar and water and cook on low heat until 119°C

25. Pour into the egg whites and stir at high speed to make Italian meringue cream

26.Mix egg yolk paste and meringue

27. Pour the mousse ring of the same size used for making the tart, refrigerate until solidified, cover it on the blueberry French milk tart and remove the mold. Decorate the surface with macarons, chocolate roses and blueberries
