How to make beef offal sauce?

Beef offal is a food that many friends love to eat. The stewed beef offal has a very rich flavor. If it is paired with some beef offal sauce, the flavor will be taken to a higher level. There are many ways to make beef offal sauce, and you can match it according to your taste.

The ingredients are as follows: 5 jin of freshly picked red peppers, 3 liang of ginger, 1 liang of garlic, 0.5 jin of sugar, appropriate amount of vinegar, appropriate amount of soybean paste, and appropriate amount of salt.

Here’s how to do it:

1. Chop the pepper into small pieces (note, you may shed tears if the pepper is spicy);

2. Add chopped ginger and minced garlic into the pot and fry until fragrant. Add the chili pepper into the pot and fry slowly over low heat without adding oil.

3. After the peppers are fried soft, add sugar and soybean paste;

4. Keep on low heat and simmer for two minutes;

5. If you want it sweet, don’t add vinegar. If you want it sour, add some vinegar and it’s ready to serve.

2 1/2 bowls of vegetable oil, 1 bowl of fermented black beans, 1 bowl of dried chili peppers, 1/2 bowl of dried lantern chili peppers, 2 tablespoons of bean paste, 1.5 tablespoons of Sichuan peppercorns, 3 star anise, 2 tablespoons of cooking wine, 4 tablespoons of sugar, 2 tablespoons of dark soy sauce, 1 tablespoon of MSG

1. Soak the fermented black beans in warm water for 15 minutes (to remove the salt), drain the water, then separate half of it and mash it into fermented black bean flour and keep the other half as it is.

2. Use a blender to grind the dried chili peppers and lantern dried chili peppers until they are 90% finely ground and set aside.

3. Grind the peppercorns and star anise into powder and set aside.

4. Heat the vegetable oil in a hot pan over medium heat until medium-hot (when the oil starts to flow), then turn to low heat and add the peppercorns and star anise powder to stir-fry until the oil turns red (about eight to ten minutes). Then add the tofu, fermented black beans and chopped dried chilies, add the pan and simmer for about ten minutes.

5. Add cooking wine at this time and simmer for another hour. Add sugar, soy sauce and MSG to adjust the taste, then simmer for another half an hour, turn off the heat, and bottle it after it cools down.
