1. 4 black pomfret, exactly 500 grams, bought at the market last night

2. Wash and cut into pieces, drain, about 2CM wide

3. Pour a little rice wine and marinate for 10 minutes to remove the fishy smell. This rice wine is brewed by my mother herself. She went back before the Spring Festival and brought a large pot of it back. I poured it into the Jiujiang Zhengzhen wine bottle and used it. It smelled so good.

4. Prepare the seasonings: 100 grams of flour. I used self-raising flour, which was left over from the last time I made a cake. Ordinary flour is also fine, but it is not as crispy as this one. 10 grams of garlic fried powder, 10 grams of spicy fried powder. I like the garlic flavor, but I also like spicy food, so I use both flavors together, or I can use only one flavor. 10 grams of wheat flour (to increase the crispness)

5. Mix all the seasonings and add a bowl of water to make a paste.

6. Pour oil into the wok, and when the oil temperature is 80% hot, put the fish pieces in. Be careful not to put too much at once, be patient and fry them slowly, one piece at a time. This way the finished product is beautiful and saves oil.
