2. Soak the bamboo fungus in cold water for 10 minutes. Peel the yam and cut it into small pieces.

3. Pour enough water into the casserole and add the blanched chicken and yam cubes. Add one tablespoon of cooking wine, 4 scallion segments, and 4 slices of ginger. Bring to a boil over high heat then reduce to low heat. Stew for half an hour

4. While the soup is cooking, soak and soften the bamboo fungus, cut off the head and tail nets, and blanch it in warm water for 20 seconds to remove the astringent taste of the bamboo fungus. After taking it out, rinse it with cold water, put it in the chicken soup, and continue to cook for more than 30 minutes.

5. Before serving, season with salt according to your taste
