Cut the chicken into pieces and prepare the seasoning (garlic, ginger slices, chopped dried chili peppers, green peppers, and perilla). Pour oil into the pan, add peppercorns and cinnamon when they are 70% to 80% cooked, pour in the chicken, stir-fry, add a little vinegar and cooking wine, stir-fry for a while, then add garlic and ginger slices. Add bean paste, dried chili segments, green peppers, light soy sauce, dark soy sauce, pepper oil, a little salt, and stir-fry for a while. Add chopped chili pepper, a little water and perilla, and serve when the juice is dry. 3. Cut the chicken thighs into pieces, add cooking wine and soy sauce and marinate for 3 minutes; turn on the heat, add vegetable oil, pour the marinated chicken pieces into the pot and spread them out, fry for 2-3 minutes and then remove; turn on the heat, heat the bottom oil, stir-fry the scallion and ginger until fragrant, then add the minced chili, pepper powder, salt, sugar and chicken pieces and stir-fry evenly before serving. |
