In Northeast China, there are many ways to cook tofu, and each one can satisfy people's taste requirements. So, what is the common method of making Northeastern soybean curd? Because everyone has their own taste, it is impossible to be precise, so we write "appropriate amount". Step 1 Cut the tofu into pieces first, then blanch it in water to make it harder and less likely to fall apart. The reason why I chose northern tofu is that it is cooked with brine, which makes it neither as chewy nor as tender as the one cooked with gypsum. Step 2 Pour the paste into a bowl. I can't find any other kind of paste here, so the most authentic one is the one made in Northeast China, usually dry paste, otherwise you can use bean paste. Step 3 Boil the soybean paste with water and add a small amount of sugar to enhance the flavor. Then add some chicken essence or MSG. For the sake of science, chicken essence is not healthier than MSG. In fact, the ingredients are similar. MSG can also be very healthy, it just depends on what it is made of. If it is made from industrial raw materials, it will be unhealthy no matter how you eat it. Step 4 Stir-fry sauce. Add a little more oil because this dish is too plain and it won’t taste good without oil. Then add chopped green onion, garlic and ginger and stir-fry. When it smells fragrant, pour the Xiekai soybean paste into the pan and stir-fry, or boil. It doesn't matter if there is more water, just boil it for a while longer. Step 5 Pour in the tofu and continue cooking. Just stir it gently, don't use force. If the tofu is broken, it will look more like that. When you think the soup is ready, taste it. Some sauces may be too light, so add some salt, but make sure it's not too salty. Don't try the tofu, because it is difficult to taste and it is normal for tofu to be bland.
