1. Mix chili powder, white sesame seeds and appropriate amount of salt and put them into a heat-resistant, water-free container. Note: Add salt according to the amount for cooking. Adding salt can prevent the red oil from having a rancid smell after being left for a long time.

2. Soak ingredient A in warm water for 10 minutes, drain and set aside; Note: Ingredient A must be soaked in water, so that the aroma of the ingredient will be integrated into the oil along with the water during the cooking process. If it is cooked directly, it will easily produce a burnt smell.

3. Cut the scallions in ingredient B into sections, cut the onion into shreds, and smash the ginger and garlic with a knife.

4. Do not turn on the fire yet, pour in cooking oil, put the drained ingredients A and B into the pot, and simmer over low heat. There will be a lot of bubbles in the pot at the beginning, don't worry, this is the moisture of the ingredients evaporating, and there will be no oil splashing. Note: Amy used an induction cooker to cook the rice, using the second level of fire (power 800W, temperature 120°). If you use a gas stove, just adjust it to low heat, that is, only the inner circle of the gas stove will have fire.

5. When there are no bubbles in the pot, continue to simmer over low heat until the ingredients are charred. Turn off the heat and use a colander to scoop out the ingredients and discard them.

6. Turn the pot back on and heat over medium heat until the oil in the pot smokes slightly. Use a spoon to pour the oil into the container containing the chili powder. After pouring each spoonful of oil, be sure to immediately use a spoon to mix the chili powder and oil evenly.

7. When the temperature of the red oil drops to a slightly hot level, add a small spoonful of sugar and stir evenly. After the red oil has cooled completely, put it into a sealable container and store it in the refrigerator. Note: The red oil just made is not the most fragrant. If you are patient and leave it for a day before eating it, the aroma of the red oil will be particularly fragrant.
