How to make spicy and sour oat noodle with fish

1. Pour boiling water (remember it must be boiling water) into the oat noodles.

2. Stir with chopsticks first.

3. When it’s slightly cool, use your hands to knead the oatmeal into dough and add sugar for half an hour. Pour the flour into warm water and knead it into white dough, add sugar and cook for 20 minutes.

4. Divide the dough into small pieces and roll them into long round sticks.

5. Cut into small pieces the size of a fingernail.

6. Roll it into a round fish shape on the chopping board, with thin ends and a thick middle.

7.Place the rolled fish on the sushi rolling mat.

8. Use a scraper to push the fish into a screw shape.

9. Brush some oil on the fish noodles. Steam in a steamer over high heat for 7-8 minutes. Make sure the water in the pot boils before putting the fish in. Do not steam it for too long, otherwise they will stick together and be difficult to separate. White fish can be steamed or boiled. After the fish noodles are steamed, they will stick together. After they have cooled down a little, gently tear them apart with your hands.

10. Put the pot on the fire and bring the water to a boil. Add the chicken legs and blanch them to remove the blood foam. Put them into a casserole, add appropriate amount of water, green onion, ginger, and cooking wine, and simmer over low heat until cooked.

11. Chop some green onions into chopped green onions, mash the garlic, and chop the coriander for later use. Rinse the peanuts with clean water, wipe dry with kitchen paper, put them into the wok with oil, and stir-fry over low heat until cooked.

12. Put the dried chili peppers and fried peppercorns into a food processor and crush them. Pour them into a small porcelain bowl, sprinkle a layer of sesame seeds on top, pour the boiling oil on top, making sure the oil covers the sesame seeds, then stir up and down with a small spoon to make chili oil. Then put a little soy sauce and vinegar (a little more) into a small bowl, add mashed garlic, chopped green onion, chili oil, pickled mustard, and salt as appropriate, then add chicken broth to make hot and sour soup.

13. Put the steamed fish into the hot and sour soup and sprinkle coriander and peanuts on top.
