1. Wash the pork belly and cut into pieces.

3. Put some oil in the pot and add onion, garlic and ginger and stir-fry until fragrant. Add pork belly and fry until it changes color;

4. Pour in dark soy sauce to color the meat; then add light soy sauce, stir-fry for a while longer to allow the meat to have a good color, then add cooking wine and water. Add enough water at once to cover the meat.

5. Add 2 bay leaves, half a star anise and a piece of cinnamon. Don't add too much spices, just bring out the flavor of the meat. After boiling over medium heat, skim off the foam and add the dried bamboo shoots. After the pot boils again, turn to low heat and simmer slowly. After about two to three hours, when the meat is tender, add salt and rock sugar and turn to medium heat to reduce the sauce.
