How to make roasted fish pancakes

3. Put the cleaned marine fish into a large bowl, add scallion segments, ginger slices, cooking wine and light soy sauce, mix well and marinate for 15 minutes.

4. Put 250 grams each of fine cornmeal and medium-coarse cornmeal into a bowl and cook the noodles with 80-90 degree hot water. When the cornmeal can hold together a ball, don't add any more water. After cooling, add yeast and 5 grams of sugar, mix well, knead into dough, cover with sugar and let rise for 20 minutes.

5. Remove the scallion and ginger slices from the pickled sea fish, sprinkle with appropriate amount of flour and beat evenly.

6. Put a clean pot on the fire, add vegetable oil and heat it, then put in the seafood and fry.

7. When both sides of the mixed fish are fried until golden brown, remove from the pan and place on a plate for later use;

8. Heat a small amount of vegetable oil in another pan, add chili, peppercorns and star anise, stir-fry until fragrant, then add the pork belly. When the pork belly releases oil, add the scallion, ginger slices and garlic cloves, stir-fry until fragrant.

9. Add the fried mixed fish. Add cooking wine and coriander, then add light soy sauce, dark soy sauce, oyster sauce, sugar and boiling water (the water should be enough to cover the fish), and an appropriate amount of salt and bring to a boil.

10. Make the cornmeal into small cakes and stick them to the wall of the pot, making sure they are slightly in contact with the soup.

11. Cover the pot and simmer on low heat for 15 minutes, then turn off the heat and open the lid. It smells so good.

12. Serve on a plate!
