Egg cake, a famous traditional snack in Chengdu, Sichuan, originated in the Qing Dynasty. In the 23rd year of the reign of Emperor Daoguang of the Qing Dynasty, an old man named Shi next to the Shishi Academy on Wenmiao Street in Chengdu (now Han Wenweng Shishi, Chengdu Shishi Middle School) was inspired by the "Aunt Banquet" held by children. He then mixed eggs, fermented flour and appropriate amount of brown sugar, and fried it in a flat pan. Because it tastes crispy, tender and refreshing and has a particularly good taste, it has become a famous Sichuan delicacy.

Egg baked cakes were originally made in the streets of Chengdu and in many famous snack shops, but there are still many vendors selling them on poles. This dish is fragrant, golden, soft, moist and nutritious, and is perfect for young and old. Nowadays, some restaurants often sell meals in the form of set meals, such as Chengdu’s famous snack bars. It is also often used as a midpoint to change the mood at banquets. The double-flavored egg cake and white fungus soup of Rulong wonton and Zhong dumplings are served together at the climax of the banquet and often arouse unanimous praise from diners. In an evaluation organized by the municipal government in 1990, the double-flavored egg cake of Long Chao Shou Restaurant and the sweet and salty egg cakes of Chengdu Famous Snacks Shop were both awarded the title of "Chengdu Famous Snacks". Common fillings for egg cakes include sugar sesame, bean curd, eight treasures, crystal, candied dates, pickled cowpea, ham, etc.

(Sweet filling): 500 grams of fine flour, 250 grams of eggs, 300 grams of white sugar, 50 grams of brown sugar, 50 grams of cantaloupe bricks, 50 grams of tangerine cakes, 25 grams of cantaloupe cherries, 20 grams of cantaloupe roses, 50 grams each of cooked sesame seeds, cooked peanut kernels, and cooked black peach kernels, 50 grams of melted lard, 50 grams of yeast flour, and appropriate amounts of water and soda.

Preparation method

1. Put the flour into a bowl, add egg liquid, 200 grams of white sugar and water made of brown sugar into the flour, stir it into a thick paste in one direction with your hands, then add yeast flour and appropriate amount of baking soda after half an hour.

2. Grind the peanut kernels, sesame seeds and peach kernels into dough, mix them evenly with sugar and various candied fruits (cut into fine particles) to make sweet fillings.

3. Put a special cake baking pan (or convex-bottom copper pot) on the fire. When the pot is hot, scoop the prepared batter into the pot, cover it with a lid and bake. When the middle of the dough is dry, add 1 gram of melted lard, then add 4 grams of the prepared sweet filling. Finally, use a clip to lift one side of the cake in the pot, fold the cake into a semicircle, turn it over and bake until golden brown.
