1. Wash the figs, remove the stems and cut in half without peeling. I like the flesh to have a grainy texture, so I cut it in half, or I can cut it into smaller pieces.

2. Squeeze the juice of one and a half lemons and rub the peel of one and a half lemons.

3. Mix figs, granulated sugar, salt, sugar, honey, red wine, lemon juice and lemon peel in a large bowl, stir well and let it sit for half an hour to an hour.

4. Put all the ingredients into the pot and heat over low heat until all the sugar is melted. Heat over medium-high heat until boiling, then reduce heat to low, stirring constantly and pressing fig flesh into a puree. This process is relatively long, taking half an hour to an hour.

5. When the liquid becomes thick and paste-like, the jam is ready! The jam will become gelatinous as it cools.

6. Take a container that is clean and dry. The container can be washed in advance and placed in the oven to dry at 100 degrees. Put the hot fig jam into a container, leaving 1cm space at the mouth of the bottle, seal it and turn it upside down. Once cooled, store in the refrigerator.
