The most common way to cook pork spine is to stew it. There are many ingredients that can be stewed, such as beans, or directly made into pork spine soup, which has a good health-care effect and the soup is very fresh. Stewing it a little longer can allow some nutrients in the bones to be fully integrated into the soup. When cooking, you can add a few drops of vinegar, which will help the body replenish calcium.

Ingredients: 500g pork spine, 3 large pork bones

Seasoning: 1 tablespoon salt, 1 scallion, 1 small piece of ginger, 2 star anise, 40 peppercorns, 1 cinnamon stick, 3 tablespoons cooking wine, 4 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 1 teaspoon rice vinegar, 1 cardamom, 2 bay leaves, 4 cloves, 2 teaspoons sugar

How to make braised bones

1. After cleaning the bones, put them in a pot filled with clean water and boil over high heat. After the water boils, skim off the foam. Continue to cook for 3 minutes, remove the bones and rinse off the foam on the surface with clean water.

2. Refill the pot with clean water, add the seasoning bag (1 scallion, 1 small piece of ginger, about 40 peppercorns, about 40 fennel, 2 star anise, 1 grass fruit, 1 cinnamon bark, 2 bay leaves, 4 cloves) and seasoning (3 tablespoons cooking wine, 4 tablespoons light soy sauce, 1 tablespoon dark soy sauce, 1 teaspoon rice vinegar, 2 teaspoons sugar), bring to a boil over high heat, add the washed bones, bring to a boil again, then simmer on medium-low heat for 1 hour

3. After 1 hour, add salt, turn to high heat, open the lid and continue cooking for 3 minutes.

Cooking Tips

It will save time to make this dish in an electric pressure cooker. Just put the ingredient packet, seasoning and water into the pressure cooker and press for just 7 or 8 minutes, and the meat and bones will be soft. Then pour it into the iron pot and cook it for 5 minutes with the lid on.

The best time to eat pork spine

After the beginning of autumn, you should eat more sour foods and less spicy foods to help the liver qi, and eat more foods that soothe the liver and moisten the lungs, such as lily, lotus root, pork, etc. Autumn is a suitable season for human body tonic, but we should choose mild tonic foods that "prevent dryness and are not greasy", such as stewing some nourishing and irritability-reducing soups, such as pork spine and white fungus.
