Method 1

Ingredients: 500 grams of flour (can make 30 pieces), a small amount of old yeast, 5 eggs, 250 grams of sugar, 15 grams of custard powder (spice powder), appropriate amount of alkali, 20 grams of baking powder, and 50 grams of cooked lard.

Beat the eggs, mix the above ingredients together (generally 500 grams of flour requires 5 eggs and 250 grams of sugar), pour into a square plate and steam for 25 minutes. Take out, cut into pieces and serve in a bowl. Be sure to apply oil to the bottom of the square plate to prevent it from sticking.

Method 2

Ingredients: 1 and a half cups of all-purpose flour, 3 eggs.

Seasoning:

A 1/2 cup of milk, 1 teaspoon of white vinegar

B 2 tsp baking powder

C 1/2 cup sugar

D 1/3 tsp baking soda, 1/2 tsp vanilla extract (if you are not so particular, you can also count this)

1. Beat the eggs in a bowl and mix well, add ingredient A and mix well, let it sit for ten minutes.

2. Add flour to ingredient B, stir, then add ingredient C, egg juice and ingredient A in turn, stir into a paste, then add ingredient D, 1/3 cup of salad oil and 2 teaspoons of water to make a batter.

3. Place a piece of paper on the bottom of the mold (a square oven tray is fine, you can make it yourself with a few layers of tin foil), pour the batter, put it in the steamer and steam it over high heat for 30 minutes, take it out and cut it into the size you want.

1. Beat the eggs in a bowl, add sugar and flour, stir, then add 2/3 of water and mix well. When it is smooth and has no powder particles, add 1/3 of water and mix well. Finally, add baking powder and mix well to make Mala cake paste.

2. Place the steamer on the steamer, put the gauze cloth on the steamer, pour the Mala cake batter into the cloth and spread it evenly, sprinkle with raisins, wolfberries and melon seeds, steam over high heat for 30 minutes, take out, put on a plate while hot, and cut into small pieces when eating.

Tip: When mixing the Mala cake batter, baking powder cannot be added together with flour, eggs and sugar, because baking powder will immediately produce carbon dioxide when it meets water, lose its effectiveness and affect the softness of the cake, so baking powder is added last.
